Y’all know what I love more than anything when it comes to cooking meals? I love easy. Easy meals are what keep me on this journey of feeding my family healthy, nourishing meals that fuel our bodies.
They help keep my meal planning on track and keep me sane. They allow me to still get a good dinner on the table even if I’ve forgotten about cooking until the kids remind me that it’s time to eat… not like that’s ever happened.
This garlic roasted broccoli has amazed my taste buds and taken the top spot of easiest side dish, and it’s healthy. What more can you ask for?
Honestly, the biggest reason that I love easy meals is my brain fog. I mean, it’s really a good thing that you’re reading this and that we aren’t discussing it face-to-face. Because halfway through a sentence my eyes tend to glaze over.
Sometimes I even look like I’m thinking about what you just said. And I really want to be, it’s not you. I swear, my mind just does its own thing. And then in the desperate attempt to not look like I just checked out, I inevitably ask you a question that you literally JUST told me and then it gets awkward. So there’s that…
Garlic Roasted Broccoli
Anyways, back to the broccoli. Y’all probably know by now that I’m a huge fan of roasting vegetables. I’ve made cabbage, sweet potatoes, and pumpkin, and I have no plans of stopping now. It’s healthy, delicious, and my family eats it, what more could you want? This broccoli is seriously only 5 ingredients.
You really can’t get much simpler than that, and that’s precisely why it’s earned a spot in the permanent dinner rotation. It pairs perfectly with my Crockpot Rotisserie Chicken or Pineapple Chili Chicken, and has the ability to convince kids to eat it too. Now, that last part did not come easily, but they ate it. I’ll take that as a win!
Garlic Roasted Broccoli
Ingredients
- 2 large heads of broccoli
- 1/4 cup avocado oil
- 2 cloves of garlic diced
- salt & pepper to taste
- *optional truffle salt for extra delicious flavor!
Instructions
- Preheat oven to 425.
- Cut the florets off of the heads of broccoli.
- Combine all ingredients in a large ziploc bag, and shake to coat.
- Spread on baking sheet and bake for 30-45 minutes, flipping halfway.
- Cook until about halfway browned and crispy.

This recipe could not be easier. I can’t believe that it actually took me this long to make this garlic roasted broccoli. It’s been on my list for quite some time, but I hadn’t gotten around to it until now.
Serves me right for procrastinating, I was missing out! If only I could remember this lesson, I could stop the procrastinating… but let’s be honest, I’ve probably already forgotten.
