I'm so glad to have you here visiting my blog! I want to tell you a little bit about myself so that you can understand who I really am and why I love writing about healthy foods, wellness, and natural living.
I'm Stefani, a 30-something old wife and mother, living in beautiful Charlotte, NC. We have been here for 6 years, and we have fallen in love with this beautiful city.
I met my amazing husband James on a plane when I was 22, and we were pretty much inseparable immediately. He's my rock and my biggest cheerleader.
I wouldn't be able to do anything that I've been able to do without him. He does everything that he can to understand my illnesses, and is wonderful about giving me time to rest and heal.
My two sweet, wild, wonderful boys are crazy and chaotic and completely amazing. They keep me busy. SO busy. They are 4 and 6, and while they fight like crazy sometimes, I'm happy that they're so close in age because they really do love each other. But I'm totally done having babies!
I love Jesus, I am real, honest, and authentic. The things you find here may not always be pretty, but they will be real life.
In my spare time, I really enjoy writing, crafts, reheating coffee, binge watching HGTV, rehabbing furniture, homeschooling my sons, binge watching Netflix, being a homebody, spending time with my family, and anything DIY. I secretly want to be an interior decorator, furniture beautifyer, natural medicine advocate, vineyard owner, dessert tester, professional Target shopper, super-mom, and a Proverbs 31 wife.
...I guess that I should add that I'm also extremely sarcastic, a bit of a perfectionist, and quite possibly slightly delusional!
Shortly after my second son was born in 2014, I started having some troubling symptoms. My anxiety was sky high, I was having panic attacks, I had rapid weight gain, trouble breathing, and discomfort in my chest. My short-term memory was completely useless, and I told my doctors that I wanted to run tests.
My doctors brushed me off, saying that it was just postpartum adjustments, and I was fine. But I wasn't fine. I pushed until I finally got in to see a naturopath who diagnosed me with Hashimoto's Thyroiditis and adrenal dysfunction. Hashimoto's is an autoimmune disease where my immune system attacks my thyroid, causing my hormones to destabilize and many of the symptoms that I had to start up.
The diagnosis was just the beginning, and little did I realize that I had to change everything about the way I was living in order to heal.
After a year on a very strict diet, a multitude of supplements, and an incredible amount of research, my blood work came back telling me that my Hashimoto's was almost in remission. That was the concrete evidence that I needed to show me that I CAN control the health of my body. What I choose do eat DOES affect me on a much deeper level than my weight. And I can help others by sharing what I've learned and what I've done to achieve healing!
Since then, I have also been diagnosed with Lyme Disease. This was a pretty big blow, on top of everything else that I had dealt with, but I was also armed with a lot more knowledge by this point. I'm in the process of healing my Lyme, balancing my hormones, and keeping my Hashimoto's on the healing path.
I had been healing so much, but could never get 100% of the way there. Through more perseverence, I finall discovered in April of 2018 what was not letting me heal completely: Mast Cell Activation syndrome, triggered by living in a moldy apartment when we were in Nashville a few years back.
So 2019 is going to bring the GAPS diet into our lives and you can expect to find more about that on my site as we navigate another family-wide elimination diet, work on optimizing our health, and embracing our life (the good, the bad, and the ugly).
I became a certified Children & Family Health Coach so that I could help other families find the link between their lifestyle and the health of their families; and show them how to overcome chronic illness with diet.
We eat a gluten free, dairy free, mostly-Paleo diet that facilitates healing, and I write a lot about easy, healthy meals for families. We don't want to wait until our kids are sick to start taking care of our bodies - we need to start now!
It's not easy, but it's so worth it. And if I can do it, then so can you.
