This detoxifying beet smoothie is a hearty, delicious, incredibly nutrient-dense meal that’s perfect for a busy lunch and really helps you pack extra veggies into your day.
Following the Wahls Protocol can be a difficult adjustment, especially in the veggie department. The Standard American Diet is lacking in most nutrients, so it’s easy to be overwhelmed with trying to consume 6-12 cups of various vegetables every day on Wahls.
I wondered how I’d all get it in when I began as well! If you’re someone who struggles with getting enough vegetables in their day, then this detoxifying beet smoothie can be a game changer for you.
Health benefits of beets
- Lowers Your Blood Pressure — Drinking beet juice has been shown to have a positive effect on elevated blood pressure. One study found that drinking one glass of beet juice for 4 weeks lowered blood pressure by 7.7/2.4 points on average. Imagine what kind of effects you could see by drinking it daily for long term!
- Fights Inflammation — Beets contain betalain pigments, which have been shown to display potent antioxidant, anti-inflammatory and chemo-preventive activity. Eating beets regularly can help reduce inflammation in the body, as well as reduce oxidative stress.
- Contain Valuable Nutrients — Beets are high vitamin C, fiber, potassium, manganese, and folate. These nutrients are essential for proper bodily function, including support of the bones, nerves, muscles, liver, and more.
- Detoxification Support — Beets help to support your body’s Phase 2 detoxification process, which allows your liver to properly process and break down toxicants and impurities in the body and excrete them. It’s also been shown to help increase your body’s production of glutathione, our master antioxidant.
One of the most common complaints that I hear from people about not eating enough vegetables is that it’s just not easy. They require prep time, many of them need to be cooked, and having to do that for every meal can be very overwhelming. It’s much easier to just pop open a bag of chips with your burger at the end of the day.
But here’s the thing; not only is it not as hard as you think to eat 6-9 cups of veggies daily (per the Wahls Protocol), but our bodies NEED the nutrients. If we want to be healthy, vibrant, and youthful, then we need to prioritize our veggie intake.
The reason that this is my go-to smoothie is because beets are incredible at helping your body detoxify and they are great for liver health. With Lyme disease, our livers are usually compromised; so I try to help support it as much as possible.
Notes from the cook
- Make one batch every 3 days. This is the easiest way for me to drink this smoothie daily, but not have to add the prep-work every day.
- I wash and cut the vegetables, add everything into the blender, and make the smoothie. Then, I split the smoothie into 3 quart-sized mason jars. (It doesn’t matter if they aren’t full).
- I top it off with water, and make sure it’s full to the very top before I put a lid on the jar. The less oxygen that’s in the jar, the more nutrients will remain for the next 48 hours.
- The nutrient density does decrease over time once it’s been blended, but with the oxygen in the jar minimized, I haven’t seen a difference in the first smoothie or the last. And making it every 3 days is so helpful for me.
- Use all organic ingredients if possible- it’s important to make sure you maximize nutrients and minimize chemicals!
- Use a high speed blender- you need one to break up the solid beets!

Detoxifying Beet Smoothie
Ingredients
- 1 large beet cut into quarters
- 1 large cucumber
- 3 large carrots
- 3 stalks of celery
- 1-2 inches of ginger
- 1 apple or 1 cup berries for Level 3 Wahls
- 1 ripe avocado
- water, kombucha, kefir, or coconut milk
Instructions
- Chop all of the vegetables, putting them into a high speed blender.
- Add water, and blend until everything is pureed.
- Pour into jars, top with water, and store.

Nutrition
Just by adding this smoothie to my lunch, I’m able to get half of my daily veggie intake in, which takes the pressure off of my dinner preparation!

Question, you do not mention this in the recipe directions. Do you peel the beets and carrots?

Hi Pamela- I don’t peel my carrots and beets. You can if you want, I just give them a good scrub and then chop ☺️

I do not have a high speed blender and since we are spending a lot on healthy foods and herbs for my recovery as well as the functional med doc, I really can’t buy one right now. We do have a nice juicer though. So what I do is scrub all the veggies, run them through the juicer and save the pulp as well as the juice. I then put them in my cheapo blender with the remaining ingredients. Its one extra step, but it works well for me and saves me the money on a new gadget right now. Thanks for the recipe.
