The weather is warm, the sun is out, and that grill that’s been sitting unused all winter is just begging to be fired up again. Why not throw on some of these paleo taco burgers and wow your family, friends, and neighbors?
You and I both know that tacos are amazing. I mean, have you ever met anyone who doesn’t like tacos? I can’t say that I have.
My whole family has always been all about the Mexican food. As a kid, it wasn’t uncommon for us to travel over an hour to get good Mexican food. On vacations, we always ate at Mexican restaurants wherever we were. Beginning to see a theme here?
My parents had their rehearsal dinner at a Mexican restaurant, and love telling the story about how my grandfather went around after the dinner and collected everyone’s leftovers for himself.
I know. That’s kind of gross, but beside the point. Loving Mexican food runs deep in my genes.
So it shouldn’t come as a shock to you that I have desperately missed this amazing food since going Paleo. I mean, yeah, I’ve got taco soups and paleo tacos. But this Paleo taco burger has got a distinct Mexican flare that I have been craving.
They’re perfect for Cinco de Mayo (especially paired with these paleo margaritas!), and maybe even with some delicious grain free tortilla chips on the side. There’s no reason to have to miss out on this delicious cuisine just because you’re avoiding certain foods in order to pursue healing.
