Tacos are everything. At least, in this house they are. I’ve always loved taco night, since I was a kid and my mom made them. They’re easy, delicious, and always a hit – because who doesn’t like tacos? However, since my journey from chronic illness to healthy living has begun, I’ve given up flour tortillas (gluten) and corn tortillas (grains). But I’m not ready to give up taco night. The result of my determination is this fantastic 10-minute taco soup, complete with gut-healing properties and a paleo option. Is there anything better than healthy taco night?
This taco soup has organic ground turkey in it as the base. We don’t eat ground beef very often, and the main reason has to do with the quality of it (and how highly inflammatory it is). When we are exposed to pollutants, whether it’s in our food, the air we breathe, lotions on our skin, or the water we drink – these toxins make their way into our fat cells. So with beef, they’re a very large, fatty animal, loaded with toxins in the fat cells.
When you cook beef, the fat melts into the meat, which is what gives it that amazing flavor. But you never know what you’re getting with that flavor, so we mostly avoid it and stick with the smaller animals such as chicken and turkey. They don’t get big enough to allow as many toxins to build up in their bodies.
Organic, grass fed beef is a great option, but it’s very expensive. So I usually decide to just skip it altogether. You can use beef in place of turkey though!
This soup only requires 10 minutes of prep, so throw it together and let it cook while you’re doing whatever else you need to be doing!
10 Minute Taco Soup
Instant Pot Paleo Taco Soup
Ingredients
- 2 lb ground beef
- 1 bag frozen kale
- 2 bell peppers chopped
- 3 tbsp taco seasoning
- 2 cans diced tomatoes with green chiles
- 1 can tomato paste
- 1 quart bone broth
- 1 quart water
- 1 onion diced
- shredded cheddar optional- omit if paleo
- Diced green onions for topping
Instructions
- Brown the meat and onion in Instant Pot, and add in half of taco seasoning.
- Add the rest of the ingredients, stir, and close Instant Pot.
- Cook on Manual- High for 6 minutes.
- Release when it's finished, let cool, and serve.
- Alternatively, add all the ingredients to crockpot and cook on low for 2 hours.
Nutrition
The bone broth in this soup is great for digestion, and for healing leaky gut. If you’re strictly paleo, avoid the cheese, and if you’ve got some on hand; add an avocado! That will definitely add some good flavor to the taco soup.
