Ingredients
2large sweet potatoes
4tbspavocodo oil
2tbspgarlic powder
2tsppaprikaomit if AIP
salt & pepper to taste
Instructions
Fire up that grill to medium heat, and then let it warm up for a few minutes.
Slice the sweet potatoes into 1/4 inch slices, and put them into a big ziploc bag.
Add the oil and spices and shake it well to coat the sweet potatoes.
Once the grill is warm, put the sweet potato slices on it in a single layer, and let them cook about 5-7 minutes per side.
If the slices are thicker, then let them cook slightly longer, just keep an eye on them.
Notes
Grilled sweet potatoes should be crisp on the outside, but still a little soft in the middle. They are easy to prep, and require little maintenance on the grill. This makes them the perfect side dish for your next cookout!
Adding garlic powder to the sweet potatoes is my favorite way to bring out a fantastic savory flavor, while still being able to enjoy the subtle sweetness of this delicious vegetable.
These would also be delicious as a dessert if you season them with cinnamon and coconut palm sugar, and then let butter melt on top when they are done.
This recipe works best if the slices are around 1/4 inch thick. But if you make them thicker, just let them cook slightly longer. It's important to keep an eye on them so they don't burn.
These store well for a couple of days in the refrigerator, but they do get softer the longer they are stored. For best results, eat the same day.
