Ingredients
1poundwild caught salmon filletskinned
2tablespoonscoconut oil
2teaspoonsblackening or Cajun seasoning
1small avocadopitted
2tablespoonsmayonnaise
2plum tomatoesthinly sliced
½cupred onionthinly sliced
1/4cupred wine vinegar
4gluten free sandwich buns
Avocado oil for pan searing
Instructions
Heat oil in a pan over medium-high heat.
Rub salmon on both sides with blackening (or Cajun) seasoning and cook for about 3-4 minutes on each side.
Mash avocado and mayonnaise in a small bowl.
Put salmon on top of sandwich bun and spread with avocado mayo.
