My kids are the best eaters. I mean, if it’s got cheese in it, then one of my kids will eat it. Probably. The other won’t because cheese is slimy. But if it has veggies in it, then neither will eat it. Unless it’s veggies that don’t have a slimy texture, then the younger one may eat some. But if it’s fried, then there’s a 45% chance that one or both of them will taste it before throwing it on the floor. But hey! We have a 99% success rate with Chick Fil A fries. I’m so winning at this parenting thing 😉 (Please, note the sarcasm).
So a couple of weeks ago I decided to try and add some extra protein and vitamins to one of the boys’ meals. However, if they catch wind of this and question me, I will deny it to the death.
Easy Bean Quesadillas
This is seriously so easy, that anybody could make it. And bonus: it’s so cheap that it won’t matter so much if you make it and they refuse it and throw it on the floor. Not that it’s ever happened here… Or on a nightly basis or anything…
All you need is a can of black beans, or other beans, and some salsa. Mash it all up, and smear it on a tortilla. Put a slice of cheese on it and grill it on the stove or put it in the microwave. Slice it up and feed it to the little gremlins. I’d say we have a winner! Bean quesadillas are perfect, because it’s minimal time wasted if the dinner itself is also wasted.
They loved it! I was so happy! Well, they loved it for the first half of the meal, and then they caught onto my happiness. Obviously, that means it can be no good, so they must start refusing it. Does anyone have luck with feeding kids anything but nuggets?!
Give it a try! What’s the worst that can happen? Cleaning smushed bean quesadillas out of the carpet? Yeah, that one’s a bummer.
