I am a huge fan of side dishes. They are seriously underrated. Sides have the power to make a meal casual or fancy, and the way you cook them can take an otherwise boring vegetable to fantastic. Now I don’t know about you, but I have never been a fan of cauliflower. It always had a taste that made me gag, and the smell resembled day-old trash. But I had only tried eating it raw. Y’all, even ranch dressing can’t make me eat raw cauliflower! Then I discovered roasting, and my whole world changed. I’ve been roasting veggies left and right with all kinds of different seasonings, and I’m so excited to introduce you to this cajun roasted cauliflower.
I decided to make the cauliflower cajun because my husband loves cajun food. He did live near New Orleans for a few years, so it’s a flavor that he is always up for. It turned out really delicious, and it even had a nice kick! Not too much that my kids wouldn’t like it, but just enough for us to notice.
In my attempt at making this the easiest recipe possible, I used a pre-mixed Cajun Seasoning. However, if you wanted to customize the spices, you are welcome to do so!
